Gather round pals. Here is a delicious breakfast if you want to give yourself or your fam a homemade treat. It’s also a great way to save those overripe bananas from the compost bin. This is an idea that I was introduced to by Weight Watchers and I added some finishing touches that make it much nicer (and less dietetic!). It is gluten free and, if you sub out the butter, it’s dairy free. This recipe is very easy to prepare, but it conjures up a denser, more egg-forward, custard-like pancake –– so don’t be scared when you discover it’s not fluffy. It’s a different thing! 
The results are sweet and comforting and totally delicious, and a great source of protein.


Serves 2 (three smaller pancakes each)
Or cut everything in half and it’s an easy bachelor breakfast.


1 banana, 2 eggs
 w/ 1 tsp. brandy or cognac, butter, and maple syrup


In a bowl, scramble an egg. Smush up a banana on a plate with a fork until it has no big lumps. Add brandy, and mix.


Heat a large frying pan to medium-low and toss in a pat or two of butter (or a neutral oil or spray oil –– do not use olive oil). Pour out three or four 3” pancakes and cook until they brown a bit on the bottom. (They need to be cooked enough to flip, so the first side takes a bit longer than the second.) Flip and turn up the heat to get them piping hot! The pancakes' second side could be done in a minute! Just check for browning on the second side and they are done. If you do four at first you’ll probably only have two more pancakes left to cook.


Plate and add a pat of butter on top and maple syrup to taste!


SMALL NOTES: The brandy/cognac might seems like a skippable detail, but it is a huge aromatic/flavor improvement, and the standard trick in all restaurant French toast. I recommend checking it out. 
Also, some people heat maple syrup (which should always live in the fridge otherwise, because MOLD) but I’ll just take it out the night before and save on the clean up.
